Cheese Sticks
Ingredients:
1cup flour ¼ cup rice flour
90 gram grated cheese ( any hard cheese just use your left over plus great idea to include some parmesan to add flavour)
60g butter, cold 1 egg yolk
Juice of half lemon
¼ tsp of chilli powder
½ tsp salt Herb of your choice. I like to add rosemary, 2 to 3 Tbs spoon, chopped.
Method:
Mix dry ingredients well. Rub in butter then add cheese , rosemary and finally the combined beaten egg and lemon juice. Mix till a dough is form. Roll out to reasonable thickness ( sorry I never measure it!) and cut to sticks. Bake on a tray lined with greased proof paper. Bake at preheated oven at 175 for 12 minutes ( more or less depending on your oven).
